My late night supper


I could not sleep last night and I was feeling hungry at the same time. Don't know why either because I did have a hearty dinner ~ pork chops with garlic mashed potatoes and potato salad! Yikes! Here's what I ate ~ Maggi Mee Goreng (this is a classic Indian Malaysian noodle dish) and because LB had asked so nicely...here's how I make my so-called mamak fried noodles. Happy weekend everyone!

Ingredients:
  • packet of maggi mee curry flavor (or another flavor and more packets if you're really hungry or feeding more people than yourself

  • 1 clove garlic (more if you really like garlic)

  • 2-3 shallots (chopped finely)

  • chicken pieces (can also be substituted with seafood, beef, etc...your choice)

  • choy sum or your choice of vegetable

  • salt and pepper for taste

  • 2 eggs (one to fry together with noddles, the other if you want a separate egg on top of your ready-to-serve/eat noodles


  • Preparation:

    Boil packet noodles for 15 mins or until soft, remove water and set aside. Preheat oil in Chinese Wok on small fire; add garlic and shallots and fry until slightly golden browned. Then add chicken and stirfry until chicken loses pink color. Add a pinch of salt to chicken for taste. Add choy sum, the boiled maggi noodles and the maggi mee flavor seasoning. Add egg last and stirfry everything together for another 2 minutes, then remove and serve. Ohhh, I also like an extra egg (over-easy) on top of my noodles. Bonapetite!
