CHICKEN CURRY IN COCONUT MILK
1 chicken, cut into chunks, or a selection of chicken pieces
4 tbsp meat curry powder [mix with warm water, stir into paste]
1 piece 2" ginger
2" cinnamon stick
1 tsp cumin
3 cloves garlic, chopped
2 onions, finely sliced
2 tomatoes, roughly chopped
1/2 cup chopped coriander
2 tbsp oil
1 bay leaf
1 lb potatoes, peeled and cut into chunks
1 cup. coconut milk
3 cups water
Salt and pepper to taste Heat oil in big pot and fry onion, stirring continuously until it starts to brown. Add ginger, garlic and fry for a minute. Then add the chicken and continue cooking for 3 minutes. Add all the spices. Stir everything together for a few minutes. Add the potatoes, bayleaf, water and coconut milk. Continue cooking until chicken is tender. Finally, add the tomatoes & coriander just before you are ready to serve. Adjust seasoning and serve with steamed rice.
